Stuffed Hot Peppers

The peppers, hand-harvested at the end of August, are washed in water and vinegar, then filled with a vegetable mixture and finally jarred in extra virgin olive oil. They make an excellent appetizer, side dish, or condiment for pasta and rice salads.
