Our pasta is made from durum wheat grown directly on the farm.
The only ingredients used are semolina and water.
We use circular bronze dies and dry the Linguine at a minimum of 36°C and maximum of 50°C for 23 hours.

They measure 260 mm in length with an elliptical cross-section 4.4 mm wide and 1.36 mm thick.
Cooking time is 7 to 9 minutes.
